  • 12 oz penne pasta
  • * 2 tbsp olive oil or butter
  • * 3 cloves garlic minced
  • * 1 cup mushrooms sliced
  • * 1 tsp crushed red pepper flakes adjust to taste
  • * 2 cups tomato sauce or marinara
  • * 1 cup heavy cream or half-and-half
  • * 2 cups fresh spinach
  • * ½ cup Parmesan cheese grated
  • * Salt & pepper to taste

  • * Grilled chicken or shrimp
  • * Cherry tomatoes halved
  • * Onions or zucchin

Instructions
 

  • **Cook Pasta** – Bring salted water to a boil, cook penne until al dente. Drain and set aside.
  • **Sauté Vegetables** – Heat olive oil in a skillet. Add garlic and mushrooms, cooking until softened.
  • **Make the Sauce** – Stir in tomato sauce and bring to a gentle simmer.
  • **Add Cream & Spice** – Lower heat, add cream, and sprinkle in crushed red pepper flakes. Stir well.
  • **Add Spinach** – Toss in spinach until just wilted.
  • **Combine** – Add pasta to the skillet, tossing to coat with sauce.
  • **Serve** – Top with Parmesan, adjust seasoning, and serve hot.
