- 4 boneless skinless chicken breasts
- 8 strips of bacon
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- ½ cup Dijon mustard
- ½ cup honey
- ¼ cup mayonnaise
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Heat your oven to 375°F (190°C).
In a bowl, mix the mustard, honey, and mayo to make your honey mustard sauce. That'll be for later
Now, season the chicken breasts with salt and pepper.
Using a skillet (medium heat is fine), cook your chicken in the olive oil. They should get a nice golden color after 3-4 minutes on each side.
Transfer the chicken breasts to a baking dish. This is when you get to use your sauce – brush a good amount onto each breast.
