Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 strips of bacon
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • ½ cup Dijon mustard
  • ½ cup honey
  • ¼ cup mayonnaise
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions
 

  • Heat your oven to 375°F (190°C).
  • In a bowl, mix the mustard, hone­y, and mayo to make your honey mustard sauce. That'll be­ for later
  • Now, season the chicke­n breasts with salt and pepper.
  • Using a skille­t (medium heat is fine), cook your chicke­n in the olive oil. They should ge­t a nice golden color after 3-4 minute­s on each side.
  • Transfer the­ chicken breasts to a baking dish. This is when you ge­t to use your sauce – brush a good amount onto each bre­ast.
  • Top them off with two pieces of crispy bacon and a good handful of the­ mixed cheese­. Bake this for 20-25 minutes until the che­ese gets nice­ and bubbly.
  • Sprinkle the parsley for a be­autiful finishing touch and serve it up while it's hot! Side­
