- 2 cups cooked shredded chicken
- 1 cup cooked rice quinoa or pasta can be substituted
- 1 cup frozen peas and carrots thawed
- 1 can 10.5 oz cream of mushroom soup
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ¼ cup breadcrumbs
- 2 tablespoons melted butter
- Salt and pepper to taste
Preheat Your Oven: Set your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Combine Base Ingredients: In a large bowl, mix shredded chicken, rice, thawed peas and carrots, cream of mushroom soup, sour cream, and half of the shredded cheese. Add salt and pepper to taste.
Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it evenly.
Add Toppings: Mix the breadcrumbs with melted butter in a small bowl. Sprinkle this mixture over the casserole, followed by the remaining cheese.
