Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 cup cooked rice quinoa or pasta can be substituted
  • 1 cup frozen peas and carrots thawed
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ¼ cup breadcrumbs
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions
 

  • Preheat Your Oven: Set your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Combine Base Ingredients: In a large bowl, mix shredded chicken, rice, thawed peas and carrots, cream of mushroom soup, sour cream, and half of the shredded cheese. Add salt and pepper to taste.
  • Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it evenly.
  • Add Toppings: Mix the breadcrumbs with melted butter in a small bowl. Sprinkle this mixture over the casserole, followed by the remaining cheese.
  • Bake: Place the dish in the oven and bake uncovered for 30–40 minutes. The casserole is done when the topping is golden and the filling is bubbling around the edges.
