Ingredients
  

  • 10 –12 ripe red jalapeño peppers
  • Pecan or mesquite wood chips for smoking

Instructions
 

  • Step 1: Select and Prep Peppers
    Choose fresh, red, fully ripened jalapeño peppers.
    Rinse and dry them thoroughly.
  • Step 2: Smoke the Peppers
    Set up a smoker or grill for indirect heat at around 200°F (93°C).
    Add soaked wood chips (mesquite or pecan preferred) for smoking.
    Smoke the peppers for 2–4 hours, turning occasionally, until they shrivel and darken.
  • Step 3: Dehydrate the Peppers
    Transfer smoked peppers to a dehydrator or a low oven at 150°F (65°C).
    Dry for 4–6 hours or until fully brittle. Break one open—if it's leathery, it needs more time.
  • Step 4: Grind to Powder
    Once completely dry, use a spice grinder or clean coffee grinder.
    Grind until fine. Optional: sift for a smoother texture.
  • Step 5: Store
    Store the chipotle powder in an airtight glass jar . Keep in a cool, dark place. Best used within 1 year.

Notes

Wear gloves when handling hot peppers.
For milder powder, remove seeds before smoking.
Combine with garlic or smoked paprika for custom spice blends.
